PROCESS: NATURAL

Yemen’s coffee tradition is deeply tied to its natural processing method, practised for centuries. Coffee cherries are carefully handpicked and dried whole under the sun on rooftops, terraces, or specially prepared drying beds. This method, which requires no water, aligns perfectly with Yemen’s arid climate and limited resources.

Qima Coffee has been actively working with Yemeni farmers to improve post-harvest processing practices. Through comprehensive training programmes and by providing access to better infrastructure, Qima supports farmers in achieving cleaner, higher-quality coffees while maintaining the integrity of Yemen’s coffee heritage. This approach not only raises the quality of the coffee but also ensures a sustainable future for Yemen’s coffee farming communities.

GENETICS: YEMENIA

Yemenia is a newly identified mother population within the species Coffea arabica, found exclusively in Yemen. This discovery represents a vast reservoir of untapped genetic diversity and future varieties with the potential to redefine the world of Arabica coffee for centuries. Yemenia was unveiled as part of Qima Coffee’s R&D programme in collaboration with Dr. Christophe Montagnon, which included Yemen’s largest-ever genetic coffee survey, spanning over 25,000 square kilometres.

The discovery was detailed in the scientific paper “Unveiling a Unique Genetic Diversity of Cultivated Coffea Arabica L. in Its Main Domestication Center: Yemen.” Yemen’s extreme coffee-growing conditions-marked by low rainfall and drastic temperature swings- have undoubtedly shaped resilient landraces over 600 years, from the introduction of coffee in the 1400s to today. Yemenia, not observed anywhere else in the world, offers a transformative opportunity for global coffee, unlocking uncharted genetic potential. Further research is ongoing to identify new varieties within the Yemenia group.

Hayma Kharijiya

Nestled in the western highlands of Yemen, within the Sana’a Governorate, Hayma Kharijiya stands as one of the country’s most renowned coffee-growing regions. This area, dotted with picturesque villages and enveloped by navy-blue mountain chains, is celebrated for producing some of Yemen’s most sought-after specialty coffees. The region’s fertile soils, fresh air, and mild climate provide the perfect environment for coffee cultivation at elevations ranging from 1,800 to 2,350 meters above sea level.

These high altitudes allow for slow cherry maturation, resulting in coffees with exceptional complexity and distinct flavour profiles. Hayma Kharijiya boasts rich valleys, including Wadi Ali, Wadi Sarf, and Wadi Bini Ahmed, and historical landmarks such as Mufhaq and Al- Manar forts, adding cultural depth to its agricultural heritage. Smallholder farmers, who are the backbone of this region’s coffee industry, rely on coffee as their primary income source. Employing traditional farming methods passed down through generations, they often grow coffee alongside other crops, maintaining the region’s ecological balance.

Sana'a

Situated in Yemen’s central highlands, Sana’a Governorate is renowned for its rugged mountainous terrain, fertile valleys, and unique climate- all of which combine to create exceptional coffee-growing conditions. The region is home to Jabal An-Nabi Shu’ayb, the highest mountain in the Arabian Peninsula, and fertile valleys such as Wadi Dhahr, known for their agricultural abundance. Remarkably, Sana’a receives the lowest annual rainfall of any coffee-growing region globally, averaging just 244 mm, compared to the global average of 1,368 mm.

Despite this, the governorate boasts one of the world’s longest continuous coffee cultures, with coffee historically exported through the port of Mocha. Sana’a Governorate is deeply rooted in Yemen’s history and was likely part of the ancient Sabaean and Himyarite kingdoms.

Its strategic location along historic trade routes facilitated its growth as a hub for culture and commerce. Surrounding the capital city of Sana’a, a UNESCO World Heritage Site, the region is known for its distinct architectural heritage. Villages and towns in the governorate feature multi-story stone and mudbrick houses adorned with intricate geometric patterns and stained glass windows. The governorate is dotted with ancient forts and landmarks that speak to its historical importance. Mafhaq Fort in Hayma Kharijiya and Al-Manar Fort once served as vital defensive strongholds.

The region remains a cornerstone of Yemeni coffee, celebrated for its quality and historical significance. Qima Yemen

Set up in the midst of Yemen’s raging civil war, Qima Coffee was first established to serve Yemen’s coffee farmers in 2016 and has grown to become Yemen’s largest specialty coffee exporter, and one of the country’s most impactful social enterprises. Since launching, Qima has grown from working with 30 farmers in one community in south central Yemen to working with almost 3,000 smallholder farmers in 55 communities across Yemen’s coffee growing lands. Beyond coffee sourcing, Qima has invested significant resources into researching Yemen’s coffee genetic landscape and has published numerous scientific papers on the subject.

In 2020, Qima announced the discovery of Yemenia, a previously unknown genetic group of the Arabica coffee species. The Yemenia genetic group has displayed unique and complex cup quality and significant potential for climate resilience – an attribute which may be of benefit for millions of farmers across the globe.
